Coconut Coffee Energy Balls with Chocolate

I loooove all kinds of energy balls and I often make those with dates and nuts in all kinds of flavors. They are healthy, filling and a great snack, and my kids often get them in their lunch boxes or as an “after school snack”.

BUT … These are not that kind of energy balls. No, Sir. These are full of chocolate, sugar and vegan butter. Not healthy at all, but SO good. I could eat these all day. But I don’t. Not every day. But sometimes, when I want to really endulge. They are the perfect vegan candy! I don’t even like sugary treats that much. I prefer salty snacks, but these are one of my favorite things in the whole world!

I can tell you one thing – make enough! If not, you will regret it. They also make perfect gifts! Fill a nice looking jar with these babies and give it to someone you care about.

Ingredients for about 15-20 balls:

  • 200 grams dark vegan chocolate
  • 2 cups quick oats
  • 100 grams vegan butter, softened (not melted)
  • 20 grams coconut oil, softened
  • 1/2 cup sugar (I use coconut sugar)
  • 2 large tbsp cocoa powder
  • 1 tsp vanilla extract
  • Pinch of salt
  • 3 tbsp strong coffee
  • Shredded coconut for rolling/decorating

This is how you do it:

Add the chocolate and the coffee in a glass bowl and place it over a water bath. Let it melt completely. Meanwhile add the rest of the ingredients into a food processor and process into a coarse meal. Add the melted chocolate and process for another 10-15 seconds. I like my energy balls a little coarse, while others like them more smooth.

Roll the batter into walnut sized (or after your liking) balls and roll them into shredded coconut. Place them on a plate and let them harden in the fridge for at least half an hour. Then place them into a box or a jar.

The balls can be kept in room temperature if not too hot, but I prefer them kept in the fridge. They can also be frozen and will keep “forever” in the freezer.
