Hummus bread? What? Well, it’s a bread based on mostly hummus, which we absolutely love! We have found the inspiration from several recipes on Pinterest and made our own Version of it, and it’s so delicious and healthy, and easy to make. It gets a little “cakey” but it’s really no issue, the taste and texture is really good, and if you throw a slice in the toaster, it’s even more delicious.

We usually slice the cold bread carefully and place them in a bag in the freezer. Then we can take out only the slices of bread we need for the day or for that one meal. You can throw it directly into the toaster when frozen.

Use different kinds of hummus for different kinds of bread, I would think that hummus with roasted bell pepper is good! We love this bread!

Glutenfritt hummusbrød - 2 forskjellige typer!

Ingredients for 1 medium loaf of bread:

  • About 2 cups hummus, homemade or store bought
  • About 2-3 cups chickpea flour (start with the lowest amount, then increase until you get a batter that resembles a thick cake batter, wet but not very runny. I have set the amount of flour pretty low because the consistency of the different types of hummus varies a lot, so it’s safer to add just a little at the start, then increase little by little)
  • 400 ml water
  • 100 ml tahini (you can skip this)
  • 2 tbsp lemon juice
  • 3 tsp baking soda
  • Sunflower- og pumpkin seeds for topping
  • If you want: chopped olives or fried onion or garlic or something in your bread for that something extra

This is how you do it:

Put everything into a bowl and mix to a soft dough. It should be like a thick cake batter. Add a little more flour if it’s too runny, or more hummus or a little water if it’s too thick. If you are using olives or such, stir them into the batter now. Vegan shredded cheese is also great here!

Find a medium bread pan and put some parchment paper on the bottom so the bread comes out easily without sticking. Pour the dough into the pan and decorate the surface of the bread with sunflower seeds or pumpkin seeds if you want.

Bake it for 1 hour (or a little longer, check with a tooth pick) at 400 F (200 c). If it gets a little too brown at the top before it’s done, cover the top with some parchment paper.

When the bread is done, let it cool in the pan until it’s room temperatured (or cold), then take it carefully out of the pan and slice to eat with your favorite toppings! Don’t slice the bread warm, I guarantee you that it will fall apart then!

    Hi! I’m unsure of how much hummus is used; 0,8?

  2. Do you think I could make this in a bread machine??

      The dough is just supposed to be mixed with a spoon, and not kneaded, so if your bread maker is kneading the dough I guess it could be a problem. I never had one myself so I’m not sure what functions they have, if you for instance can turn off the kneading mode. But you can try, I know I would try it if I owned one. 😀
      Hope it turns out well if you try! Maybe there will be some comments on here from people who knows.
