Vegan ground enjoys coarse subjects, but sometimes things can be very finely pulverised as well. When it comes to how we like our guac it is definetly coarse. We like it when there are some chewing resistance. Often we prepare two batches of guacamole on friday evenings. On that is way too smooth, almost creamy consistence (yucky stuff, but then there are different taste buds out there). This is mainly for the children who likes it that way. And then we make a batch to suit our more correct understanding of how this dish should be, full of chunks and consistency. If you are able to see and taste the different ingredients by themselves in the guacamole then your gum can bring them together nicely. We are not talking sauces or dressings here you know, this is Guacamole. That should be, and must be VERY coarse. Unless you like to eat your guac as a yucky, creamy and green substance. Then feel free to bring your best handblender to the issue and blend until your consistence is achieved (which is the wrong way btw, regards Gunnar)

Ingredients (2 person)

  • 1 fit, big and mature avocado
  • 1/2 tomato or 2 – 3 cherry tomatoes
  • 1 clove of garlic
  • 1/2 medium sized onions
  • 1/2 red chili
  • Lots of fresh coriander
  • The juice of half a lime
  • Salt
  • Pepper

This is how you do it

  1. Peel the avocado and mash into suiting pieces a bowl
  2. Chop the tomato (s), garlic, onion, chili and coriander in appropriate pieces (the bigger the better, in Gunnar`s opinion)
  3. Add the juice of half a lime
  4. Season with salt and pepper
